Ingredients

  • Vegetable stock (water diluted) – 750 ml
  • Tomatoes (peeled and chopped) – 410 g (at least 1 tomato should be ripe and big)
  • Fresh basil – one handful
  • Large onion (chopped) – 1
  • Large carrot (grated and peeled) – 1
  • Garlic cloves (crushed) – 4
  • Sugar (preferably use substitutes like stevia) – 2 ml
  • Salt and pepper – to taste
  • Olive oil – 30 ml

Method of Preparation

First, heat olive oil in a large saucepan. Now add the onion, carrot, and a single clove of garlic. Sauté these ingredients until they are soft. This might take around 5 minutes. Here you must add the tomatoes along with their juices, sugar, seasoning, and the stock. Wait till the ingredients come to a boil. Reduce the heat, cover the saucepan and let the soup simmer for 30 to 40 minutes. Lastly, add the basil, the remaining cloves of garlic and seasoning and serve immediately.

Method of Preparation

Rub the sliced eggplants with salt. Let them sit for about thirty minutes after which you must press to drain the excess water out of the eggplants. Rinse them once. Now dice the eggplants into medium sized chunks. Take a large pan, place it on medium heat and add the olive oil. Now, sauté the onion and garlic in it till the garlic is golden brown in color. Here you should add the diced eggplants and cover the pan with a lid. Occasionally open the lid and stir. After the eggplants have softened, add the tomatoes, some whole basil leaves and salt. Cover it again for 20 minutes without forgetting to stir from time to time. In the meantime, cook the pasta according to the package directions. Strain it and add to the sauce. Mix thoroughly and serve with a sprinkling of fresh basil on top.

Method of Preparation

First, place the walnuts, cinnamon and nutmeg in the food processor and blend. Place the date balls in the middle of the wanton sheets and fold the edges. Make whatever size you wish. In a large saucepan, heat the oil on medium high heat. Drop the wanton balls and fry till they are golden brown. Place the fritters on paper towels so that they soak up the excess oil. Sprinkle the powdered cinnamon as well as the optional almonds, honey and walnuts! Serve immediately.
